The Dragon 3.5” Paring Knife is the perfect size and shape for small, delicate tasks, such as peeling, trimming, coring, decorating, and detailing. Shaped like a miniature chef knife, the Dragon Paring has a slight belly curve to it, making chopping, mincing, and slicing up small foods and herbs a breeze. Handcrafted by Yaxell, designed by Apogee Culinary Designs. The Dragon uses American, nitrogen-enriched BD1N steel with a Rockwell Hardness of 63. Harder than even some Japanese steels, which is the quality that enables such a fine edge, the Dragon’s BD1N steel retains the durability of a German knife. Constructed from one piece of this wonder-steel, the Dragon is finished with a Micarta handle, made from layers of canvas treated with resin to create an enduring handle that'll last decades.
