Description
The long and thin blade of the Sujihiki is perfect for carving and slicing roasts, turkey, raw meats, fish, and all other proteins as the extended blade length allows you to slice with one long stroke, instead of sliding the knife back and forth in a sawing motion and the utilitarian Kiritsuke tip is good for piercing.
Now on their 8th generation of blade makers, the Nigara family have been forging knives, tools and swords for over 350 years. For the Tsuchime Migaki series they've chosen to use Aogami Super Steel for the core of the knife. Aogami Super is a very popular and durable steel and used widely throughout the Japanese knife world so it's one that's easy to sharpen and retains an edge well so this is definitely a knife that's going to last when cared for. The hammered Tsuchime pattern is unique and industrial and the polished Migaki finish adds contrasting smooth simplicity. The traditional octagonal Walnut handle is durable, simple, and comfortable.
