The Kiritsuke Gyuto is used for all the tasks for which you'd use a chef's knife. Known as the master chef's knife, it offers top cutting performance and versatility. With its straighter edge, it is ideal for slicing and push cuts. Julienne, dice, or brunoise vegetables with ease. It's also an excellent choice for cleaning and portioning boneless proteins, and particularly fish thanks to the pointed tip. It slices cooked proteins easily and gracefully.
Balancing beauty with performance, Yoshikane SKD knives are made with SKD, a semi-stainless steel that offers long lasting edge retention and superior cutting performance. The blades feature a Nashiji finish. Nashiji in Japanese means ‘pear skin pattern’.It has a textured feel that comes from a knife finishing technique where the surface of the blade is left looking unfinished or rustic. The teak handles are the traditional octagonal shape with a horn ferrule.
