The kiritsuke, known as the “master chef’s knife” in Japan, is gifted to only the most accomplished chefs after years of experience. As a hybrid between a Japanese vegetable knife (usuba) and a traditional Japanese slicing knife (yanagiba), the kiritsuke is a graceful general purpose knife that excels at almost everything.
