The Shun Hiro 7” Santoku is considered a chef's knife in Japan. A versatile blade with a flatter edge than a traditional 8” chef, it’s an excellent tool for slicing fruits, vegetables, fish, and boneless meats. The 7" blade is maneuverable, promoting excellent blade control, and also works very well with smaller jobs such as chopping herbs and mincing garlic. Many cooks have completely replaced their traditional chef knife with the efficient santoku.
The Shun Hiro 7” Santoku features an intriguing blade pattern and finish, created by Damascus-cladding 32 layers of steel on each side of the blade. The blade is extremely bright, finished with a mirror-polished surface and a tsuchime finish (hammered finish). The premium SG2 micro-carbide cutting core offers remarkable cutting performance, achieving an extraordinary Rockwell Hardness of 64. This incredible and beautiful blade is lightweight and extremely sharp, finished to a 16° angle for intense precision. The ambidextrously contoured handle is made of stunning crimson and charcoal Pakkawood, built for comfort, and inlaid with a mosaic reminiscent of ancient samurai family crests.
