The Wüsthof Classic 8” chef knife, also known as the ‘French’ or ‘Cook’s’ knife, is the most important knife in the home or professional kitchen. Whether cutting, chopping, or slicing, no other knife is as versatile as the multi-purpose chef’s knife because it is a designed to perform a variety of common cutting tasks rather than excelling at any one.

Dimples or hollow-ground Hollow Ground edges on a blade create air pockets between the knife and the food while slicing for reduced friction and suction. This decreases prep time when slicing and cutting because foods slide easier off the blade with less binding and sticking.

Even high-quality knives gradually dull due to use: to compensate, a honing steel should be used regularly. A few strokes of both sides of the knife over the sharpening steel will help you to maintain the sharpness of a good blade. Honing re-aligns the microscopic teeth in the blade that can't be seen with the naked eye. By regularly honing your knives, you will maximize the time in between sharpening. WÜSTHOF honing steels are made from hard chromium plated steel with a hardness of 65 Rockwell. All honing steels are produced from an alloy tool steel (material no. 2210) with 1.15%C (carbon) content, .6% chromium and .03% vanadium.

The Wüsthof Sharpening Steel Classic 10" (4474-26) is made to match your set of Wüsthof Classic knives. Its 10” length makes it functional for most households with knives up to 9” in length, and it will fit in conventional blocks.
