The Global GS Anniversary Series Kiritsuke Knife, crafted from Cromova18 stainless steel with a Rockwell hardness of C56-58, features a sharp 15-degree cutting edge and is designed by Komin Yamada in Japan. The GS-110, a smaller 15cm version of the traditional Kiritsuke knife, pays homage to its larger counterparts, which are typically over 24cm and used by Japanese head chefs as versatile slicing tools. While traditional Kiritsuke knives are challenging to master and often symbolize status among skilled chefs, the GS-110's slightly curved blade makes it suitable for general cutting tasks, effectively serving as a small chef's knife. This model is included in special edition sets celebrating the brand's 40th anniversary. Global® Knives has also created a double-edged version of the Kiritsuke in their Classic series, enhancing versatility for various kitchen tasks, including fine dicing and chopping, while maintaining less curvature for optimal push-and-pull cutting motions.
