Also known as a Nakiri knife the Global GS Series 5.5" Vegetable Knife is a Japanese-style square-tip knife that is great for chopping meat, root vegetables and big prep jobs. Popular alternative to the Santoku, this vegetable knife is a perfect every-day knife for all general cooking purposes.
The GS Series features comparatively short blade lengths, such as petty knives and paring knives. Features of these knives in this series are functionality that satisfies professional users, and a wide variety of products.
The blade is constructed of a single piece of steel, with a unique convex edge for unsurpassed performance. The blade is made of the finest stainless steel called CROMOVA 18 (Chromium, Molybdenum and Vanadium), designed exclusively for GLOBAL that is ice tempered and hardened to hold the razor-sharp edge of the blade longer than any other steel.
The ergonomic, stainless steel handles are hollow and filled with sand to achieve perfectly balanced knives and optimal control. The signature dimpled pattern offers a comfortable, slip-resistant grip and the unique shape is perfect for using a pinch grip, it also creates a seamless transition from blade to handle making it very easy to just hand wash and dry, without worrying about stuck food particles.
