Also known as the Asian chef's knife, the Santoku is a well-rounded knife that can accomplish a lot of cutting task and it excels at slicing, dicing, and mincing. Think of it as a cross between a Gyuto (chef's knife) and Nakiri (vegetable cleaver knife).
With a traditional appearance from afar, the Hayabusa line features an elegant blade with a VG-5 cutting core sandwiched in the layered San Mai construction style that creates the delicate wave design near the edge of the blade. The western style pakkawood handle features rivets and a welded bolster, providing heft and balance. As an entry-level knife, the Hatsukokoro VG-5 Hayabusa offers an accessible, reliable, and durable introduction to the world of Japanese knives.
