Description
Kasumi Kuro combines the aesthetics of both the original Damascus series with the newer hammered series of knives. The properties of both ranges already being well known, razor-sharp edges and design features evoking the natural beauty of the Japanese landscape.
High carbon molybdenum vanadium steel is used for the core material with 32 layers of Damascus steel protecting the core metal which is hardened to 58 Rockwell. These knives feature a handle made of sturdy black laminated reinforced wood and has an octagonal shape, giving it a finish that is both durable and luxurious. The name Kuro (meaning black in Japanese) comes from the handle design.
Japan has always revelled in its isolation, a mysterious land filled with mountains, dragons and the sea. The Kasumi has always understood to be a spring mist, a well known phenomenon in Japan, it will settle over the mountains and sheltered valleys of rural Japan. The ‘Kasumi’ describes the pattern on the blades.
The nakiri blade shape is extremely practical and, with its blunt tip, it is safer to use in the kitchen. Due to its straight blade, edge, and spine, the nakiri is not rocked like a chef's knife. Instead, use a push cut by moving the knife down and forward while keeping the edge parallel to the cutting surface.
