Together, Kori Culinary and Vargas have designed and created this limited edition Kiritsuke to honour the work of the Burn Fund, which includes providing lifesaving, life-supporting, and life-enriching services to support burn survivors as well as increasing public awareness about fire safety.
The Kiritsuke is an excellent all-purpose Japanese knife that can be used like a Gyutoh (chef’s knife) for the preparation of boneless meats and vegetables, and the angled tip makes for simple slicing, just like the Yanagiba (slicing knife).
Traditionally, the Kiritsuke was a status symbol reserved for use by executive chefs, and the beautiful Japanese quality 37-layer Damascus clad blade and red and black linen micarta handle of this Limited Edition Kori Artisan Kiritsuke will make you feel like a professional.
While this knife is one of only 300 pieces, all Canadian designed Kori Artisan knives are handcrafted for beauty, function, and superior performance. Taking over 60 steps to complete each knife, Kori Artisan uses advanced materials and crafting techniques to ensure your knives last you years.
Each blade features a Japanese VG10 core, surrounded by layers of hammered steel to create that beautiful layered Damascus pattern. The blade of this special knife features the BC Burn Fund logo along with Michael Varga's signature engraved into the metal. The final point of contact is the handle. Using a beautiful, riveted linen micarta handle, the texture provides the ultimate tactile sensation and control. It is completed by a traditional mosaic pin and end cap.
