Description
The Kiritsuke is an excellent all-purpose Japanese knife that can be used like a Gyutoh (chef’s knife) for the preparation of boneless meats and vegetables, and the angled tip makes for simple slicing, just like the Yanagiba (slicing knife).
Now on their 8th generation of blade makers, the Nigara family have been forging knives, tools and swords for over 350 years. For the Tsuchime Kurouchi series they've chosen to use SG2 powder steel for the core of the knife. SG2 is super hard, can get mega sharp, and it holds an edge like carbon steel, is easy to resharpen and fairly low maintenance. The hammered Tsuchime pattern is unique and industrial and the Kurouchi finish adds even more rustic character to the blade. The Octagonal Birchwood handle is durable, simple, and comfortable.
Due to the nature of handcrafting and traditional blacksmithing, each knife is unique and may have some cosmetic distortion or irregularities. This is expected and normal. Because these knives are handcrafted, they do not qualify for warranty services.
