Shun Classic knives, the first series in a brand that defines ingenuity and performance, are as practical as they are beautiful, and boy do they look good! Joining the line is the Shun Classic Asian Chef 7" (DM0760).
The blades are made using an ancient Samurai sword method, where different types of steel are layered together (69 layers, 34 layers on each side plus the core), heated up, and compressed to impart the distinct benefits of different alloys. Shun knives feature a middle core of a high-carbon "super steel" called VG-Max, with softer outer layers of a higher chromium, low-carbon SUS-410 steel that resists corrosion and adds resiliency to the ultra-hard core. With these characteristics, the Shun classic series combines the ultimate in edge-holding ability, while still maintaining a resilient spine that will flex before it breaks. All this old-meets-new technology is bonded to a beautiful resin-strengthened Pakkawood® handle that is NSF approved. The handle's unique D-shaped design fits the hand exceptionally well, keeping the blade centred and controllable.
