Customarily used for slicing sashimi and sushi, the Shun Dual Core 10.5" Yanagiba Knife (VG0020) has the length, width, and single-bevel of a traditional sashimi knife. The single-bevel (sharpened on only one side), and the thin profile of this blade allow you to get extremely smooth, precise cuts of difficult ingredients or sushi rolls, which is vital for presentation. With the long blade, you can achieve smooth cuts with one stroke, rather than sawing and doing a disservice to your ingredients.
Before Shun Dual Core, it was considered impossible to create layered Damascus from two different steels. But Shun has masterfully achieved the unachievable. Each Dual Core features 71 alternating layers of VG10 and VG2 super-steels, roll-forged together to create an exceptionally strong and beautiful knife. As you use the knife, the two steels wear at different rates, creating micro-serrations along the edge that keep the knife sharper for longer. A traditional, octagonal Pakkawood handle promotes comfort, a secure grip, and is shaped for ambidextrous use. Accompanied by a traditional Japanese wooden saya, or sheath.
