Description
The Shun Dual Core 6.5” Nakiri is a traditional Japanese vegetable knife, designed to get those paper-thin cuts of radish, cucumber, or ginger. Characterized by its rectangular shape and width, the nakiri is great for chopping up herbs and vegetables, and transferring ingredients from cutting board to cooking vessel. While the nakiri is very versatile and may look like a cleaver, it is not suitable for cutting bones.
Before Shun Dual Core, it was considered impossible to create layered Damascus from two different steels. But Shun has masterfully achieved the unachievable. Each Dual Core features 71 alternating layers of VG10 and VG2 super-steels, roll-forged together to create an exceptionally strong and beautiful knife. As you use the knife, the two steels wear at different rates, creating micro-serrations along the edge that keep the knife sharper for longer. A traditional, octagonal Pakkawood handle promotes comfort, a secure grip, and is shaped for ambidextrous use. Accompanied by a traditional Japanese wooden saya, or sheath.
For a hand-forged, traditional look, the Shun Premier 5.5" Nakiri features a hammered tsuchimi finish and a walnut Pakkawood handle.
