Description
With its interesting shape, the 6.5" Shun Kagerou Nakiri excels at precisely cutting vegetables with a long, flat belly profile making full contact with the cutting board. The Nakiri isn’t rocked like a chef’s knife. Instead, use a push cut by moving the knife down and forward while keeping the edge parallel to the cutting surface. Nakiri (bōchō) in Japanese means “vegetable cutter” or “leaf cutter,” this knife is a staple preparation tool of the heavily vegetable based cuisine eaten in Japanese homes. Kagerou, or “heat haze” in Japanese, refers to the exquisite ladder-bar pattern featured on the newest product line from Shun. All components of Kagerou are performance driven. The series features a cutting edge of forged Dual Core Damascus steel, 71 layers of high-carbon, VG10 & VG2, married to a beautifully polished stainless steel upper sure to catch the eye. A traditionally Japanese shaped handle in grey PakkaWood comfortably fits the hand giving the user authoritative control. Finally, all handle components are weighted to maintain the balance.
