The Sujihiki is a specialized Japanese slicing knife designed primarily for making precise cuts of meat and fish. The Yoshikane Nashiji SKD12 Sujihiki 9.5" (HKT-46) beautifully balances aesthetics and functionality, crafted from SKD, a semi-stainless steel known for its exceptional edge retention and cutting performance. The blades feature a Nashiji finish. Nashiji in Japanese means ‘pear skin pattern’.It has a textured feel that comes from a knife finishing technique where the surface of the blade is left looking unfinished or rustic. The teak handles are the traditional octagonal shape with a horn ferrule.
