Shun Hiro knife features 64 layers of gorgeously-patterned, mirror-polished Damascus-clad steel, which is then hand-hammered to give the blade a look reminiscent of ancient Japanese bladesmithing. Not only does the hammered tsuchime finish look rustic and intriguing, it also create air pockets which help food slide away from the blade instead of sticking to it. The premium SG2 micro-carbide cutting core offers remarkable cutting performance, achieving an extraordinary Rockwell Hardness of 64. The charcoal and crimson Pakkawood handle is contoured to be ambidextrous—a quality many chefs find only too scarcely. Each Hiro is exceptionally light, incredibly sharp, and exceptionally crafted. "Hiro" means abundance, which we think refers to all the excellent qualities these blade have.
