Ceramic Honing Steels
Ceramic honing steels are made of a very hard, fine material that is gentle on knives. Excellent for Japanese blades, ceramic honing rods have a very fine abrasive that will remove a minuscule amount of steel. Because it removes a bit of steel, it takes fewer passes with your knife to realign the edge. However, like pottery, ceramic honing steels can break, so take care when using one.
